Love that you've been hitting the books to uncover the history of these ingredients. I also did the same recently for a deep-dive into tofu.

P.S. Wow, you can even donate blood at a 7-11? How does that work?

Ooh I wanna hear all about the tofu! Gearing up to make some of my own. I’m not sure about how to donate blood- it might just be to set up an appointment or get coordinated with a medical center. Most of that stuff seems to link into other services and information systems. I’m a novice 7-11 user. Just getting my HSR tickets printed and paid for was a paperwork culture shock!

Ah yes- a little more research reveals that Sevens are donor registration sites. You would get the blood drawn at a different location. But it’s meant to make it more convenient to get the ball rolling. Kind of cool!

Tofu was and is a personal interest project, and I am looking to create a shareable piece out of it (probably multiple). (Though it will be a little bit until I get to it.)

Seeing as you have published on several platforms, any quick thoughts on Substack vs YouTube vs anything else?

Can't wait to read it when you produce this piece!

I like both platforms - we're pretty new to YouTube. I think it just depends on what medium comes most naturally and quickly for you. For me, I enjoy writing and can do it relatively quickly (though in extreme marathon, always late fashion, i don't know why i can only perform under these conditions), so substack is my preferrred way of communicating.
